Egusi is one of Nigeria’s most significant soups, and most Nigerian tribes prepare it. Follow this simple method on how to make Egusi soup. Whether you are cooking it for an occasion or personal consumption.
WHAT IS EGUSI SOUP MADE UP WITH?
Egusi is a soup made with melon. Ground egusi is the primary ingredient used in cooking this delicacy. Ingredients needed are:
- 1 cup blended melon
- 2 cooking spoons of palmoil
- Uziza leaf, Ugwu, or waterleaf, etc.
- 1 medium sized onion
- 2cups of water
- 3 seasoning cubes (it depends on the quantity
- of soup you want to cook)
- Blended pepper
- ½ cup stock 1 tsp. salt
- 1 tsp. crayfish
- Chicken
- Cow skin (Ponmo)
- Cow tripe (Saki)
- Cow feet
- Stock fish/4 medium sized smoked panla fish
- Locust bean (Iru)
WHAT DOES EGUSI SOUP TASTE LIKE?
Egusi soup is nutty, spicy, and very rich due to the variety of assorted ingredients often used in cooking the soup.
METHOD OF COOKING
Although there are different methods in which you can cook your egusi soup, I prefer to cook it this way because it’s faster and also comes out great every time I prepare it.
All the ingredients must be washed and well placed in a clean bowl or place.
- Boil the chicken and other assorted you intend to use.
- Grind the Egusi. It is advisable always to buy whole egusi seed and grind it yourself so the
Egusi will be free from sand. - Also, blend pepper separately.
- Add palm oil to a pot, allow it minute, wash your locust bean and pour into the heated oil and then pour your grinded melon into the already heated palm oil. Add stock water and allow it to cook for 3 minutes on low heat.
- After being cooked for 3 minutes, pour your blended pepper and all the assorted such as your chicken, stockfish, smoked panla fish, Pomo, etc., and add your seasoning to taste and allow it to cook for 10 minutes. And when cooking these, make sure you did not add too much water so as not to be watery.
- Next, add the Ugwu leaf or any leaf of your choice off your gas and allow the vegetable to
steam for 5 minutes. Your Egusi soup is now ready for consumption. You can serve your Egusi with either pounded yam, eba, or any swallow of your choice.
